Pork Burritos & a Giveaway!!

25 May

Let’s see how astute you guys are today.

How many of you know how much I love burritos?

How many of you know how much I love Pork?

How many of you know how much I love America’s Test Kitchen?

How many of you know that this is my ONE HUNDREDTH post??????

How many of you know that it’s my birthday this week?!?!!!?!

How many of you are sick of me asking you questions?????

What is the whole POINT of this post??!?!

Besides me telling you about these awesome burritos (they were awesome) I have decided that I want to give you a present for my birthday.

You’ve seen me post a couple of recipes about my newest cookbook, Slow Cooker Revolution. I am seriously in love with this cookbook. I love my slow cooker, I use it all the time. I even have a smaller slow cooker that I use for dips mostly (and desserts!). What I like most about this cookbook is that it’s more than just throwing stuff in the slow cooker and letting it do it’s thing. While there are some recipes that throw everything into the slow cooker and it comes out great, there are other recipes that just fall flat. By doing a little extra grunt work before putting everything into the slow cooker, the flavor comes out 1000x more.

Well, the lovely people at America’s Test Kitchen are letting me giveaway a copy of Slow Cooker Revolution to one of my readers! Chock full of 200 recipes, from breakfast, lunch, dinner, dessert, sides, and everything in between, even if you don’t win this copy you need to buy this book if you love slow cooker’s like I do!

So, how do you enter to win? Simple. Just leave a comment telling me what’s your favorite way to use your slow cooker!

Want extra entries?????

1. Follow me (@kitchenmisfit) and America’s Test Kitchen (@TestKitchen) on Twitter and Tweet: I  just entered to win a copy of @TestKitchen Slow Cooker Revolution from @KitchenMisfit Enter here! http://wp.me/pVDUw-hn

2. Please make sure to leave separate comments for each entry

3. Entries will be accepted until midnight of May 29th

4. Winner will be announced sometime on May 29th via random.org

Full Disclosure: Slow Cooker Revolution was purchased by myself. All opinions are my own and I was under no obligation to review the cookbook. I just really love America’s Test Kitchen 😉

And now, I know ya’ll are dying for this Pork Burrito recipe. So here ya go!

Pork Burritos

From America’s Test Kitchen

Pork Filling

  • 2 onions, minced
  • 1/4 cup chili powder
  • 3 tbsp vegetable oil
  • 6 garlic cloves, minced
  • 1 minced canned chipotle chili in adobo sauce
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 15oz can tomato sauce
  • 2 tsp sugar
  • 3lbs boneless pork butt roast, trimmed and halved
  • salt and pepper
  • 1 tbsp fresh lime juice
Microwave onions, chili powder, oil, garlic, chipotles, coriander and cumin in a bowl, stirring occasionally, until onions are softened, about 5 minutes. Transfer to slow cooker.
Stir tomato sauce and sugar into slow cooker. Season pork with salt and pepper, add to slow cooker, and coat evenly with sauce mixture. Cover and cook until pork is tender, 9-11 hours on low or 5-7 hours on high.
Transfer pork to large bowl, let cool slightly, then shred into bite-sized pieces, discarding excess fat. Let remaining liquid settle for 5 minutes, then skim the fat off the top.
Toss shredded pork with 1 cup braising liquid. Stir in lime juice. Add more braising liquid if necessary.
To Make Pork Burrito:
  • 2-4 large whole wheat tortilla
  • 1 can black beans, drained and rinsed
  • 1 cup cooked white rice
  • juice of 1-2 limes
  • 1 cup chopped cilantro
  • 2 large tomatoes, seeded and chopped
  • 1 can green chilies
  • 2 avocados
  • 1-2 cups shredded cheese
Combine rice with half of chopped cilantro and half of lime juice and mix thoroughly. Warm beans in microwave 1-2 minutes. Combine tomatoes with remaining cilantro and lime juice and green chilies. Mash avocados and set aside.
To assemble burritos, first warm tortilla in microwave for 20 seconds. Then layer rice, beans, avocado, tomatoes, pork and cheese on top. Fold in the sides then roll the burrito. Cover in foil. To eat, unwrap the burrito from the foil. Eat!

OMG that looks amazing and I WANT.

My fave way to use my slow cooker… Hmm. I JUST started using it, so I haven’t tried too many ways. But so far? Chili!! In the winter, chili is the ultimate comfort food. Yum.

    P.S. We need to:
    1) Go out to dinner again soon and
    2) Try cooking together!

Happy Birthday! There is a special stew called cholent which Jews slow cook all winter long, from Friday night to Saturday afternoon to eat for lunch on the Sabbath. It’s unbelievably delicious and makes your house smell magical. CheapBeets@wordpress.com

  9. tiffany May 25, 2011 at 9:15 am #

That burrito looks yummy! I use my slow cooker to make corned beef and cabbage. It doesn’t get a lot of use, so I would love a cookbook for some new ideas.

  10. Taryn May 25, 2011 at 9:18 am #

Yum these look fantastic!! I like using a slow cooker for things like pork that need a lot of time to break down and tenderize, because I can leave them in the cooker for hours without doing any work, and have an amazing result!

  11. Taryn May 25, 2011 at 9:18 am #

Also, I already follow both you and Test Kitchen, and I tweeted about the giveaway!

  12. Megan May 25, 2011 at 9:19 am #

Well whaddya know–My favorite way to use the slow cooker is to slow cook pork! My mom has an amazing pork roast recipe that makes the pork incredibly moist, tender, and delicious!

The slow cooker is one of my best friends in the kitchen. This book would be phenomenal to have! 🙂

That sounds really interesting! I’m a BIG curry fan!

  16. Quinn May 25, 2011 at 9:45 am #

Oh my word. You know I’m going to make these as soon as I’m within arm’s reach of my slow cooker. And since my GF is a member of the Tribe, I’ll use my other slow cooker (I have a problem) to make “refried” beans that are really just dry pinto beans cooked all day in water with a bunch of spices and a quartered onion. I’m seriously giddy thinking about slow cooker burrito night.

I love using my slow cooker for enchilada sauces – and pulled pork, of course!

  18. Erin May 25, 2011 at 3:08 pm #

I love my slow cooker AND Americas Test Kitchen! Durning the winter months my slow cooker gets a perminant spot on my kitchen counters. I think my favorite thing to make is a big batch of tortilla soup. Or mac and cheese, so yummy!

  19. Pete Williamson May 25, 2011 at 4:13 pm #

  24. Barb May 25, 2011 at 10:10 pm #

My favorite way is…not using it. It kind of scares me! i don’t know WHAT to put in there. I’ve tried a couple things like…chicken and lemon sauce…and it was ok, but not great. I need new ideas!

  25. Elizabeth May 26, 2011 at 8:24 am #

I’m not entering, since I already own a copy, but those burritos look fantastic.

  26. Joy May 26, 2011 at 9:35 am #

I love my slow cooker partly because it makes me kitchen smell sooo gooood even tho I haven’t been in there cooking away for hours! I use mine often to make tomato gravy…it cooks down to a thick, dark gravy, just the way we like it.

  27. Jen Angel May 26, 2011 at 3:08 pm #

I have been thinking about buying this book for a while. I use the slow cooker most often to make steel cut oats!

  28. Jessica May 26, 2011 at 3:14 pm #

I use my slow cooker alot to reheat frozen dinners. If I make a lasagna, I freeze part of it in a tupperware that will fit inside the crock, so I can just pop it out as a round frozen block, plug my crock into a light timer, set it to kick on and simply heat it through (not overcook it). Piping hot, reheated dinner when I get home. on the table in 5 min.

Would so love to win this book!

    • kitchenmisfit May 26, 2011 at 4:23 pm #

Wow that’s a great tip! I would have never thought to use it to reheat leftovers!

I love this chicken ranch recipe that we made a year or so ago. It was delicious, but… it wasn’t an America’s Test Kitchen recipe. I can’t WAIT to try this pulled pork recipe. I’m sure it will be FANTASTIC as always. Thanks for sharing, and happy blogging!!

  36. Valerie Serao May 27, 2011 at 12:08 pm #

My favorite way of using a slow cooker is when you want to have friends over for a weeknight meal. No having to hustle to get a meal together after a long day at work. Just make a salad, serve your day-long simmered concoction straight out of the crock and enjoy your company!

  37. nicole May 27, 2011 at 8:26 pm #
